Brian Kelley

Founder & CEO

Before Butter, Brian Kelley was a restaurant owner.

He owned and operated One Caroline in Saratoga Springs, New York — a neighborhood favorite known for its hospitality, food, and community. Like every operator, Brian lived the daily reality of juggling labor, food costs, sales, reviews, weather, staffing, and unpredictable guest traffic — all while trying to actually run the business.

He knows firsthand:

  • What it feels like to be overstaffed on a slow night
  • What it feels like to be slammed and short-handed
  • How hard it is to pull clean insights from messy POS reports
  • How easy it is to miss important trends when you’re in the weeds

And he knows the most painful truth of all:
